Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed and drained
  • 2 cups Water
  • 1 Avocado diced
  • 1 Tomato diced
  • ¼ cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. In a pot, bring water to a boil. Add lentils and cook for 20-25 minutes until tender. Drain and let cool.
  2. 2. In a mixing bowl, combine cooked lentils, diced avocado, tomato, and red onion.
  3. 3. Drizzle olive oil and lemon juice over the salad. Season with salt and black pepper. Toss gently to combine.
  4. 4. Serve immediately or chill in the refrigerator for 30 minutes before serving.
