Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 cups Water
  • 1 cup Cherry Tomatoes halved
  • 1 Cucumber diced
  • 1 Red Bell Pepper diced
  • ¼ cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper freshly ground
  • ¼ cup Fresh Parsley chopped

Instructions 

  1. 1. Rinse the lentils under cold water.
  2. 2. In a saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender. Drain and let cool.
  3. 3. In a large mixing bowl, combine cooked lentils, cherry tomatoes, cucumber, red bell pepper, and red onion.
  4. 4. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Garnish with fresh parsley and serve.
