Lentil and Sweet Potato Pie

Ingredients 

Pie Filling

  • 1 cup Lentils cooked
  • 2 medium Sweet Potatoes peeled and diced
  • 1 cup Vegetable Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and Pepper

Pie Topping

  • 2 cups Mashed Potatoes

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, cook the diced sweet potatoes until tender. Drain and set aside.
  3. In the same saucepan, sauté the chopped onion and minced garlic until translucent.
  4. Add the cooked lentils, vegetable broth, cumin, paprika, salt, and pepper. Simmer for 10 minutes.
  5. Transfer the lentil mixture to a baking dish. Top with mashed potatoes.
  6. Bake in the preheated oven for 20 minutes or until the top is golden brown.
