Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 2 stalks lemongrass, chopped
  • 1 inch ginger, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 200 grams rice noodles
  • 1 cup shredded chicken (optional)
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 cup bean sprouts
  • 1 handful fresh cilantro, chopped
  • 1 handful fresh mint, chopped

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the lemongrass, ginger, and garlic. Cook for 2-3 minutes until fragrant.
  2. Add the broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  3. Add the rice noodles and cook according to package instructions. If using, add shredded chicken.
  4. Stir in the fish sauce and soy sauce. Adjust seasoning as needed.
  5. Divide the soup into bowls. Top with bean sprouts, cilantro, mint, and a squeeze of lime.
