Main Ingredients
- 2 cups Heavy cream
- 1 cup Whole milk
- ½ cup Sugar
- 1 tablespoon Lemon zest
- 1 teaspoon Fresh thyme leaves
- 2 teaspoon Unflavored gelatin
- 3 tablespoon Cold water
1. In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes.
2. In a saucepan, combine heavy cream, milk, sugar, lemon zest, and thyme. Heat over medium heat until sugar dissolves and mixture is hot but not boiling.
3. Remove from heat and stir in gelatin until fully dissolved.
4. Strain the mixture to remove lemon zest and thyme leaves.
5. Pour into ramekins and refrigerate for at least 4 hours, until set.
