Ingredients 

Main Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup sugar
  • 1 tablespoon lemon zest
  • ¼ cup lemon juice
  • 1 teaspoon fresh thyme leaves
  • 4 egg yolks

Instructions 

  1. In a saucepan, combine cream, milk, and sugar. Heat until sugar dissolves.
  2. In a bowl, whisk egg yolks. Slowly add hot cream mixture to yolks, whisking constantly.
  3. Return mixture to saucepan. Cook over low heat until thickened.
  4. Remove from heat. Stir in lemon zest, lemon juice, and thyme.
  5. Cool mixture. Churn in ice cream maker according to manufacturer’s instructions.
