Ingredients 

Main Ingredients

  • 2 oz Gin
  • 1 oz Lemon juice freshly squeezed
  • 0.5 oz Simple syrup
  • 3 sprigs Thyme plus extra for garnish
  • to top Club soda
  • to garnish Lemon wheel

Instructions 

  1. 1. In a cocktail shaker, muddle the thyme sprigs with the lemon juice and simple syrup.
  2. 2. Add the gin and fill the shaker with ice. Shake well.
  3. 3. Strain into a highball glass filled with ice.
  4. 4. Top with club soda and garnish with a lemon wheel and a sprig of thyme.
