Main Ingredients
- 1 cup All-purpose flour
- ½ cup Butter cold and cubed
- ¼ cup Sugar
- 1 Egg yolk
- 2 tablespoon Cold water
Lemon Filling
- ½ cup Lemon juice freshly squeezed
- 1 tablespoon Lemon zest
- ½ cup Sugar
- 3 Eggs
- ¼ cup Heavy cream
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine flour and sugar. Add cold butter and mix until it resembles coarse crumbs.
Add egg yolk and cold water. Mix until dough forms. Press into tartlet pans.
Bake for 10-12 minutes or until golden. Let cool.
For the filling, whisk together lemon juice, lemon zest, sugar, eggs, and heavy cream.
Pour filling into cooled tartlet shells. Bake for 15 minutes or until set.
Let cool before serving. Enjoy!
