- 2.5 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1.5 cups granulated sugar
- 1 unit egg
- 2 teaspoon vanilla extract
- 2 tablespoon lemon zest from 2 lemons
- 2 tablespoon lemon juice freshly squeezed
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, whisk together the flour, baking soda, and baking powder. Set aside.
In another bowl, beat the butter and sugar together until light and fluffy. Add the egg, vanilla extract, lemon zest, and lemon juice. Mix well.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 8-10 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
