- 1 cup unsalted butter softened
- ½ cup granulated sugar
- 2 tablespoons lemon zest freshly grated
- 2 cups all-purpose flour
- ¼ teaspoon salt
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the lemon zest and mix well.
Gradually add the flour and salt to the butter mixture, mixing until just combined. Do not overmix.
Roll the dough into 1-inch balls and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand.
Bake in the preheated oven for 18-20 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
