Ingredients 

Main Ingredients

  • 1 cup Arborio Rice
  • 4 cups Chicken Broth kept warm
  • 1 small Onion finely chopped
  • 2 tablespoon Olive Oil
  • 1 cup Parmesan Cheese grated
  • 1 Lemon zested and juiced
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat the olive oil in a saucepan over medium heat. Add the chopped onion and cook until translucent.
  2. 2. Add the Arborio rice and cook, stirring constantly, for about 2 minutes until the rice is lightly toasted.
  3. 3. Begin adding the warm chicken broth one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding the next ladle.
  4. 4. Continue this process until the rice is creamy and cooked through, about 18-20 minutes.
  5. 5. Stir in the lemon zest, lemon juice, and grated Parmesan cheese. Season with salt and pepper to taste.
  6. 6. Serve immediately, garnished with extra Parmesan and lemon zest if desired.
