Ingredients 

Main Ingredients

  • 12 oz pasta any type
  • 1 cup ricotta cheese
  • 1 lemon zested and juiced
  • ¼ cup olive oil
  • 2 cloves garlic minced
  • ¼ cup Parmesan cheese grated
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions 

  1. 1. Cook the pasta according to the package instructions. Drain and set aside.
  2. 2. In a mixing bowl, combine ricotta cheese, lemon zest, lemon juice, and olive oil. Mix well.
  3. 3. In a pan, heat a bit of olive oil over medium heat. Add minced garlic and cook until fragrant.
  4. 4. Add the cooked pasta to the pan and toss to coat with the garlic oil.
  5. 5. Remove from heat and stir in the ricotta mixture. Mix until the pasta is well coated.
  6. 6. Season with salt and pepper to taste. Garnish with grated Parmesan cheese and fresh basil.
