Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 lemon juiced and zested
  • 2 tablespoon olive oil
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ½ teaspoon salt to taste
  • ¼ teaspoon black pepper to taste

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a mixing bowl, combine quinoa, lemon juice, lemon zest, olive oil, cherry tomatoes, cucumber, red onion, and parsley. Mix well.
  5. 5. Season with salt and black pepper to taste. Serve chilled or at room temperature.
