Ingredients 

Main Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon poppy seeds
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 egg
  • 1 cup buttermilk
  • 2 tablespoon melted butter
  • 1 tablespoon lemon zest

Instructions 

  1. In a large mixing bowl, whisk together the flour, poppy seeds, sugar, baking powder, baking soda, and salt.
  2. In another bowl, beat the egg and then whisk in the buttermilk, melted butter, and lemon zest.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a griddle or frying pan over medium heat and lightly grease it. Pour ¼ cup of batter for each pancake onto the griddle.
  5. Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
  6. Serve warm with your favorite toppings.
