  • 1 cup sugar
  • ½ cup butter, softened
  • 2 eggs
  • ½ cup milk
  • ¼ cup lemon juice
  • 1 tablespoon lemon zest
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons poppy seeds

Instructions 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the milk, lemon juice, and lemon zest.
  3. Combine the flour, baking powder, and salt; stir into the batter just until blended. Fold in the poppy seeds. Pour into the prepared loaf pan.
  4. Bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
