  • 2 tablespoons lemon zest
  • 0.25 cup lemon juice

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan.
  2. In a mixing bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, whisk together eggs, olive oil, milk, lemon zest, and lemon juice.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
