Rinse the rice under cold water until the water runs clear.
In a saucepan, bring water to a boil. Add the rice and salt, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.
Remove from heat and let it sit, covered, for 5 minutes.
Fluff the rice with a fork, then stir in the olive oil, lemon zest, lemon juice, parsley, and dill.
