Lemon Herb Quinoa Vegetables Recipe

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 lemon zested and juiced
- 2 tablespoon olive oil
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ¼ cup fresh parsley chopped
- ¼ cup fresh mint chopped
- to taste salt and pepper
1. Rinse the quinoa under cold water.
2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
4. In a large mixing bowl, combine the cooked quinoa, lemon zest, lemon juice, olive oil, cherry tomatoes, cucumber, parsley, and mint.
5. Season with salt and pepper to taste. Serve warm or chilled.
