Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cup water
  • ¼ cup olive oil
  • ¼ cup lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 1 cup cherry tomatoes halved
  • ½ cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh mint chopped
  • to taste salt and pepper

Instructions 

  1. 1. Rinse quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. 3. Remove from heat and let stand for 5 minutes. Fluff with a fork.
  4. 4. In a mixing bowl, whisk together olive oil, lemon juice, and lemon zest.
  5. 5. Add cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and mint to the bowl. Toss to combine.
  6. 6. Season with salt and pepper to taste. Serve chilled or at room temperature.
