Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 lemon zested and juiced
  • 2 tablespoon olive oil
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh mint chopped
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  4. 4. In a mixing bowl, combine the cooked quinoa, lemon zest, lemon juice, olive oil, parsley, mint, salt, and pepper. Mix well.
  5. 5. Serve warm or chilled.
