Ingredients 

Main Ingredients

  • 1 cup Orzo
  • ¼ cup Olive Oil
  • ¼ cup Lemon Juice freshly squeezed
  • 1 tablespoon Lemon Zest
  • ½ cup Chopped Fresh Herbs such as parsley, basil, and mint
  • 1 cup Cherry Tomatoes halved
  • ½ cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Feta Cheese crumbled
  • to taste Salt and Pepper

Instructions 

  1. 1. Cook the orzo according to package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, whisk together the olive oil, lemon juice, and lemon zest.
  3. 3. Add the cooked orzo, chopped herbs, cherry tomatoes, cucumber, red onion, and feta cheese to the bowl.
  4. 4. Toss everything together until well combined. Season with salt and pepper to taste.
  5. 5. Serve immediately or refrigerate for later.
