Ingredients

  • 4 pieces Chicken breasts
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Dried oregano
  • 1 tablespoon Dried thyme
  • 1 piece Lemon, sliced
  • 2 cups Mixed vegetables (carrots, bell peppers, zucchini)

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, salt, pepper, oregano, and thyme.
  3. Coat chicken breasts with the mixture and place in a baking dish.
  4. Add sliced lemon and mixed vegetables around the chicken.
  5. Bake for 30 minutes or until chicken is cooked through.
  6. Serve hot and enjoy!
