Main Ingredients
- 2 cups Pasta cooked and drained
- 2 cups Chicken breast cooked and diced
- 1 cup Cherry tomatoes halved
- 1 cup Cucumber diced
- ¼ cup Red onion thinly sliced
- ¼ cup Feta cheese crumbled
Dressing
- ¼ cup Olive oil
- 2 tablespoon Lemon juice freshly squeezed
- 1 teaspoon Dijon mustard
- 1 teaspoon Honey
- 1 teaspoon Dried oregano
- 1 teaspoon Dried basil
- to taste Salt and pepper
1. Cook the pasta according to the package instructions. Drain and set aside.
2. In a large mixing bowl, combine the cooked pasta, chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, dried oregano, dried basil, salt, and pepper.
4. Pour the dressing over the pasta salad and toss to combine.
5. Chill in the refrigerator for at least 30 minutes before serving.
