Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold, cut into cubes
  • 0.25 cup sugar
  • 1 pinch salt
  • 1 large egg yolk
  • 2 tablespoon ice water

Filling

  • 1 cup sugar
  • 3 large eggs
  • 1 tablespoon lemon zest freshly grated
  • 0.5 cup lemon juice freshly squeezed
  • 2 tablespoon ginger freshly grated
  • 0.5 cup heavy cream

Instructions 

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Add egg yolk and ice water, mix until the dough comes together. Press into a tart pan.
  4. Bake the crust for 15 minutes. Let it cool.
  5. In another bowl, whisk together sugar, eggs, lemon zest, lemon juice, and ginger. Stir in heavy cream.
  6. Pour the filling into the cooled crust. Bake for 20-25 minutes until set.
  7. Let it cool before serving. Enjoy!
