Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 lemon juiced and zested
  • 1 tablespoon fresh ginger grated
  • 2 tablespoon olive oil
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup fresh parsley chopped
  • ¼ cup fresh mint chopped
  • to taste salt and pepper

Instructions 

  1. Rinse the quinoa under cold water.
  2. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. Fluff the quinoa with a fork and let it cool.
  4. In a mixing bowl, whisk together lemon juice, lemon zest, grated ginger, and olive oil.
  5. Add the cooled quinoa, cherry tomatoes, cucumber, parsley, and mint to the bowl. Toss to combine.
  6. Season with salt and pepper to taste. Serve chilled or at room temperature.
