Ingredients

  • 3 units lemons zested and juiced
  • 1 cup sugar
  • 3 units eggs large
  • ½ cup unsalted butter cut into pieces

Instructions 

  1. In a saucepan, combine lemon zest, lemon juice, and sugar. Cook over medium heat until sugar dissolves.
  2. In a bowl, whisk eggs. Slowly add to lemon mixture, whisking constantly.
  3. Cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in butter until melted.
  4. Strain curd through a sieve into a bowl. Cover and refrigerate until set.
