Ingredients 

Crust

  • 1 cup all-purpose flour
  • ½ cup unsweetened shredded coconut
  • ¼ cup sugar
  • ½ cup unsalted butter, melted

Filling

  • 1 cup sugar
  • 2 tablespoons all-purpose flour
  • 3 large eggs
  • ½ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • ½ teaspoon baking powder

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. In a mixing bowl, combine flour, shredded coconut, and sugar for the crust. Stir in melted butter until mixture is crumbly.
  3. Press the crust mixture into the prepared baking pan. Bake for 10-12 minutes, or until lightly golden.
  4. In another bowl, whisk together sugar and flour for the filling. Add eggs, lemon juice, lemon zest, and baking powder. Mix until smooth.
  5. Pour the filling over the baked crust. Bake for an additional 15-18 minutes, or until the filling is set.
  6. Allow to cool completely before cutting into bars. Dust with powdered sugar if desired.
