Ingredients

  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 lb chicken breast cut into bite-sized pieces
  • 1 lemon zested and juiced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley chopped

Instructions 

  1. 1. Rinse quinoa under cold water.
  2. 2. In a saucepan, bring chicken broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. 3. In a skillet, heat olive oil over medium heat. Add chicken, garlic, salt, and pepper. Cook until chicken is browned and cooked through.
  4. 4. Add lemon zest and juice to the chicken. Stir well.
  5. 5. Fluff the cooked quinoa with a fork and mix in the chicken and lemon mixture.
  6. 6. Garnish with fresh parsley before serving.
