Ingredients 

Main Ingredients

  • 2 cups quinoa rinsed
  • 1 lb chicken breast cut into bite-sized pieces
  • 1 lemon zested and juiced
  • 2 tablespoon olive oil
  • 1 cup chicken broth
  • 1 cup water
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup frozen peas
  • ¼ cup fresh parsley chopped

Instructions 

  1. 1. Rinse quinoa under cold water.
  2. 2. In a saucepan, combine quinoa, chicken broth, water, and salt. Bring to a boil.
  3. 3. Reduce heat to low, cover, and simmer for 15 minutes.
  4. 4. In a skillet, heat olive oil over medium heat. Add chicken and cook until browned.
  5. 5. Add lemon zest, lemon juice, black pepper, and peas to the skillet. Cook for 5 minutes.
  6. 6. Fluff quinoa with a fork and mix in the chicken mixture.
  7. 7. Garnish with fresh parsley and serve.
