Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter cold, cubed
  • 0.25 cup sugar
  • 1 pinch salt
  • 1 unit egg yolk
  • 2 tablespoon cold water

Filling

  • 1 cup sugar
  • 3 unit large eggs
  • 1 unit egg yolk
  • 1 cup fresh lemon juice
  • 2 tablespoon lemon zest
  • 0.5 cup heavy cream
  • 1 cup fresh blueberries

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Add egg yolk and cold water, mix until dough forms. Press into a tart pan. Bake for 15 minutes.
  4. For the filling, whisk together sugar, eggs, egg yolk, lemon juice, and lemon zest. Stir in heavy cream.
  5. Pour filling into the crust and bake for another 15 minutes, or until set. Let cool.
  6. Top with fresh blueberries before serving.
