Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • ¼ cup Granulated sugar
  • ½ cup Unsalted butter, melted

Filling

  • 16 oz Cream cheese, softened
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 tablespoon Lemon zest
  • ¼ cup Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh blueberries

Instructions 

  1. Preheat oven to 325°F (163°C). Line a 9x9-inch baking pan with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the prepared pan.
  3. Bake crust for 10 minutes. Remove from oven and let cool.
  4. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition.
  5. Mix in lemon zest, lemon juice, and vanilla extract. Gently fold in blueberries.
  6. Pour filling over the cooled crust. Bake for 35-40 minutes or until the center is set.
  7. Allow to cool completely, then refrigerate for at least 2 hours before cutting into bars.
