Lemon Bars Recipe

These lemon bars are the perfect balance of sweet and tart, with a buttery crust and a zesty lemon filling.

Ingredients 

Crust

  • 1 cup butter softened
  • 2 cups all-purpose flour
  • ½ cup sugar

Filling

  • 1 ½ cups sugar
  • ¼ cup all-purpose flour
  • 4 eggs large
  • cup lemon juice freshly squeezed

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened butter, 2 cups of flour, and ½ cup of sugar. Mix until well blended.
  3. Press the mixture into the bottom of an ungreased 9x13 inch baking pan.
  4. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden.
  5. In another bowl, whisk together the remaining 1 ½ cups sugar and ¼ cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
  6. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool.
  7. Once cool, cut into squares and dust with powdered sugar if desired.
