  • 1 cup orzo
  • 1 bunch asparagus trimmed and cut into 1-inch pieces
  • 1 lemon zested and juiced
  • 2 tablespoon olive oil
  • 1 clove garlic minced
  • ¼ cup Parmesan cheese grated

Instructions 

  1. 1. Cook the orzo according to package instructions. Drain and set aside.
  2. 2. In a large pan, heat olive oil over medium heat. Add garlic and cook until fragrant.
  3. 3. Add asparagus to the pan and cook until tender, about 5-7 minutes.
  4. 4. Stir in the cooked orzo, lemon zest, lemon juice, and Parmesan cheese. Season with salt and pepper to taste.
  5. 5. Serve warm and enjoy!
