Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold, cut into cubes
  • ¼ cup sugar
  • 1 pinch salt
  • 1 egg yolk

Filling

  • 1 cup sugar
  • 3 eggs
  • ½ cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • ½ teaspoon culinary lavender ground
  • ½ cup heavy cream

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until crumbly. Add egg yolk and mix until dough forms. Press dough into tart pan.
  3. Bake crust for 15 minutes. Let cool.
  4. In another bowl, whisk together sugar, eggs, lemon juice, lemon zest, and lavender. Stir in heavy cream.
  5. Pour filling into cooled crust. Bake for 15 minutes or until set. Let cool before serving.
