Ingredients

  • 2 cups kohlrabi, peeled and grated
  • 1 cup carrot, grated
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. In a large mixing bowl, combine the grated kohlrabi, grated carrot, and thinly sliced red onion.
  2. In a small bowl, whisk together the apple cider vinegar, olive oil, honey, salt, and black pepper.
  3. Pour the dressing over the kohlrabi mixture and toss to combine.
  4. Garnish with fresh parsley and serve immediately or refrigerate until ready to serve.
