  • 1 cup Kimchi chopped
  • 1 cup Carrots shredded
  • 1 cup Cucumber sliced
  • 1 cup Spinach fresh
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Sesame Seeds toasted
  • 2 cloves Garlic minced

Instructions 

  1. 1. Cook the brown rice according to package instructions.
  2. 2. In a large mixing bowl, combine the cooked brown rice, chopped kimchi, shredded carrots, sliced cucumber, and fresh spinach.
  3. 3. In a small bowl, mix the soy sauce, sesame oil, toasted sesame seeds, and minced garlic.
  4. 4. Pour the dressing over the rice and vegetable mixture. Toss well to combine.
  5. 5. Serve immediately or chill in the refrigerator for 30 minutes before serving for a more refreshing taste.
