Ingredients 

Salad Ingredients

  • 2 cups Kale, chopped
  • 1 large Sweet potato, diced
  • 2 tablespoon Olive oil divided
  • 1 pinch Salt
  • 1 pinch Black pepper

Dressing Ingredients

  • 2 tablespoon Lemon juice
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potato with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes, or until tender.
  3. In a large mixing bowl, combine the chopped kale with the remaining 1 tablespoon of olive oil. Massage the kale for a few minutes until it becomes tender.
  4. In a small bowl, whisk together the lemon juice, honey, and Dijon mustard to make the dressing.
  5. Add the roasted sweet potatoes to the kale, and drizzle with the dressing. Toss to combine.
