Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Water
  • 2 cups Sweet potatoes peeled and cubed
  • 1 tablespoon Olive oil
  • 4 cups Kale chopped
  • 1 cup Chickpeas cooked or canned
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black pepper to taste

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. In a large bowl, combine cooked quinoa, roasted sweet potatoes, kale, and chickpeas. Toss to mix well.
  5. Season with additional salt and pepper if needed. Serve warm.
