Ingredients 

Main Ingredients

  • 4 cups Kale, finely chopped
  • 1 cup Carrots, shredded
  • ½ cup Red cabbage, thinly sliced
  • ¼ cup Red onion, thinly sliced
  • ¼ cup Sunflower seeds

Dressing

  • ¼ cup Olive oil
  • 2 tablespoon Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. 1. In a large mixing bowl, combine the kale, carrots, red cabbage, red onion, and sunflower seeds.
  2. 2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper.
  3. 3. Pour the dressing over the kale mixture and toss well to combine.
  4. 4. Let the slaw sit for at least 10 minutes before serving to allow the flavors to meld.
