Salad Ingredients
- 1 bunch Kale chopped
- 1 cup Cherry Tomatoes halved
- 1 cup Cucumber sliced
Avocado Tahini Sauce Ingredients
- 1 large Avocado peeled and pitted
- 2 tablespoon Tahini
- 1 clove Garlic minced
- 2 tablespoon Lemon Juice freshly squeezed
- ¼ cup Water more as needed
- to taste Salt
- to taste Black Pepper
1. In a large mixing bowl, combine the chopped kale, cherry tomatoes, and cucumber.
2. In a blender, combine the avocado, tahini, garlic, lemon juice, and water. Blend until smooth. Add more water if needed to reach desired consistency.
3. Season the avocado tahini sauce with salt and black pepper to taste.
4. Pour the avocado tahini sauce over the salad and toss to combine.
5. Serve immediately and enjoy!
