  • 1 bunch Kale stems removed, leaves chopped
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Honey
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. 1. In a large mixing bowl, combine the chopped kale, cherry tomatoes, and red onion.
  2. 2. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.
  3. 3. Pour the dressing over the kale mixture and toss to coat evenly.
  4. 4. Sprinkle the crumbled feta cheese on top and serve immediately.
