Ingredients 

Salad Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 4 cups kale chopped
  • 1 cup cherry tomatoes halved

Pesto Ingredients

  • 2 cups basil leaves packed
  • ½ cup olive oil
  • ¼ cup pine nuts toasted
  • 2 cloves garlic minced
  • ½ cup Parmesan cheese grated
  • 1 tablespoon lemon juice freshly squeezed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper freshly ground

Instructions 

  1. 1. Cook the quinoa: In a saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and set aside to cool.
  2. 2. Make the pesto: In a blender, combine basil leaves, olive oil, pine nuts, garlic, Parmesan cheese, lemon juice, salt, and black pepper. Blend until smooth.
  3. 3. Assemble the salad: In a large mixing bowl, combine the cooked quinoa, chopped kale, and cherry tomatoes. Add the pesto and toss until everything is well coated.
  4. 4. Serve: Divide the salad into bowls and serve immediately.
