Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 bunch kale chopped
- 1 cup cherry tomatoes halved
- ¼ cup feta cheese crumbled
- 2 tablespoon olive oil
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. Rinse the quinoa under cold water.
2. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes.
3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
4. In a large mixing bowl, combine quinoa, chopped kale, cherry tomatoes, and avocado slices.
5. Drizzle with olive oil and lemon juice. Season with salt and black pepper. Toss gently to combine.
6. Top with crumbled feta cheese before serving.
