Ingredients 

Main Ingredients

  • 500 g Mushrooms cleaned and stems removed
  • 2 cups Kale chopped
  • ½ cup Olive Oil
  • ¼ cup Parmesan Cheese grated
  • 2 cloves Garlic minced
  • ¼ cup Pine Nuts toasted
  • to taste Salt and Pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Place mushrooms on a baking sheet, gill side up.
  3. In a blender, combine kale, olive oil, Parmesan cheese, garlic, pine nuts, salt, and pepper. Blend until smooth.
  4. Spoon the kale pesto onto each mushroom cap.
  5. Bake for 20 minutes or until mushrooms are tender.
  6. Serve warm.
