Ingredients 

Main Ingredients

  • 2 cups Kale chopped
  • 1 cup Basil fresh
  • ½ cup Pistachios shelled
  • ½ cup Olive oil
  • 2 cloves Garlic minced
  • 1 cup Mushrooms sliced
  • 2 cups Quinoa cooked
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a blender, combine kale, basil, pistachios, olive oil, and garlic. Blend until smooth to make the pesto.
  2. 2. In a skillet over medium heat, sauté the mushrooms until tender, about 5-7 minutes.
  3. 3. In a bowl, combine cooked quinoa, sautéed mushrooms, and kale pesto. Mix well.
  4. 4. Season with salt and black pepper to taste. Serve warm.
