Kale & Olive Oil Vegan Mashed Potatoes

Ingredients 

  • 2 pounds Yukon Gold potatoes peeled and cut into chunks
  • 1 bunch Kale stems removed and chopped
  • ¼ cup Olive oil
  • 2 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste

Instructions 

  1. 1. Boil the potatoes in a pot of salted water until tender, about 15-20 minutes.
  2. 2. While the potatoes are boiling, sauté the kale in a pan with a bit of olive oil until wilted, about 5 minutes.
  3. 3. Drain the potatoes and return them to the pot. Add the olive oil, garlic, salt, and pepper.
  4. 4. Mash the potatoes until smooth, then fold in the sautéed kale.
  5. 5. Adjust seasoning to taste and serve warm.
