  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 4 cups kale, chopped
  • 2 cups potatoes, diced and cooked
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the chopped kale and cook until wilted, about 5 minutes.
  5. Add the cooked potatoes, salt, and black pepper. Cook until everything is heated through and slightly crispy, about 5-7 minutes.
