Salad Ingredients
- 6 cups kale, chopped
- ½ cup dried cranberries
- ¼ cup sliced almonds
- ¼ cup feta cheese, crumbled
Dressing Ingredients
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- ½ teaspoon salt
- ¼ teaspoon black pepper
1. In a large mixing bowl, combine the chopped kale, dried cranberries, sliced almonds, and crumbled feta cheese.
2. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper to make the dressing.
3. Pour the dressing over the salad and toss well to combine.
4. Serve immediately or refrigerate for up to 2 hours before serving.
