Kale Caesar Salad
A healthy twist on the classic Caesar salad, using kale instead of romaine lettuce.

Salad Ingredients
- 1 bunch Kale stems removed, leaves chopped
- ½ cup Parmesan cheese grated
- 1 cup Croutons
Dressing Ingredients
- ½ cup Mayonnaise
- 2 tablespoon Lemon juice freshly squeezed
- 1 teaspoon Dijon mustard
- 1 clove Garlic minced
- ¼ cup Olive oil
- to taste Salt and pepper
1. In a large bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, minced garlic, and olive oil until smooth.
2. Add the chopped kale to the bowl and toss to coat the leaves with the dressing.
3. Add the grated Parmesan cheese and croutons, and toss again to combine.
4. Season with salt and pepper to taste. Serve immediately.
