Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1 can white beans, drained and rinsed 15 oz
  • 4 cups vegetable broth
  • 1 bunch kale, stems removed and leaves chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Cook until softened, about 5 minutes.
  3. Stir in white beans, vegetable broth, and thyme. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Add kale and cook until wilted, about 5 minutes.
  6. Season with salt and pepper to taste.
