Instructions
Heat olive oil in a large pot over medium heat.
Add onion, garlic, carrot, and celery. Cook until softened, about 5 minutes.
Stir in white beans, vegetable broth, and thyme. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Add kale and cook until wilted, about 5 minutes.
Season with salt and pepper to taste.
